FAIRBURY, Neb. -- A Ziggi’s Coffee breakfast restaurant is opening in Fairbury in the spring. 

There is a sign under the Ray’s Apple Market sign that says, “Ziggi’s Coffee, coming soon.”

The construction is being done on the corner of 14th and K Streets where plumbing is underway and dirt is being dug up. 

The store will be right next to the old McDonalds building and close to Subway, which is in the strip of stores. 

The restaurant would give Fairbury more breakfast options in town. 

“We really have a lack of breakfast options in town so I thought it would be a good choice to have here,” said Ryan Rippe, Owner of Ziggi’s Coffee in Fairbury. “Breakfast sandwiches, breakfast burritos, smoothies, energy drinks and a lot of kids items. There is definitely a lot of excitement, a lot of talk about it.”

The store is set to finish construction in March and to open in April.
