BEATRICE – Beatrice will be getting a new restaurant in the future, following approval by the city council of a $50,000 economic development loan from the city’s LB 840 fund.


A building that would house a Jimmy John’s restaurant along with two other business spaces would be located at the northeast corner of Sixth and Monroe.
Nixon Restaurant and Property, Inc. is receiving the loan. Owner Sam Nixon says his company owns other restaurants in York and in Seward, which started business the past two years.


"We're proposing three suites. We were initially excited about five-thousand-plus feet, but when we looked at occupancy and parking and a drive-through that comes from the southeast and wraps around towards the northwest, we really couldn't sacrifice the parking. So, we kind of downsized little bit. We're looking at maybe a four to forty two hundred square foot building. Jimmy John's would be on the north end of the building....with offering the middle space and the other end space for a potential business."

The building would face west. Nixon says his company would like to see the restaurant open sometime around January to March, of 2025.


"I would say we would hire, in the restaurant alone...initially, 30...and keep more than 20 on staff."


The entrance to the property would be off U.S. Highway 77, close to the entrance of the nearby KFC. The drive-up would empty onto an alley.
