BEATRICE - Construction will start soon in north Beatrice for a new restaurant, along with space available for lease. A groundbreaking was held Friday afternoon where a new Jimmy John's restaurant will go in…..at U.S. Highway 77 and Monroe Street. Norfolk-based Nixon Restaurant and Property Inc. is the owner and developer of the new business, which will be located off the east side of the highway between McDonald’s and KFC.

Developer Sam Nixon says the building’s shell and facade should be in place by the fall.  "We'll be doing all the finish work and bringing in the equipment and doing all the final touches with the Jimmy John's. After which we're gonna get through the holidays and then we're looking to turn key."

Nixon is working with Nerud Construction on the project and they’ve partnered on two previous Jimmy John’s Restaurants.  "Quarter one is a great outlook for us in 2025 to open the doors, and get the public in here and give us a shot."

The restaurant will have a drive-up around the east side of the building.  "The drive through will just come around the back end of it and enter out onto Highway 77. When we get finished with it, it should look pretty slick."  There will be access to the property from both U.S. 77 and Monroe Street.

Nixon Restaurant and Property has other Jimmy John’s locations in Norfolk, Wayne, Columbus, York and Seward.  The Beatrice project is receiving a $50,000 economic development loan from the City of Beatrice LB 840 fund…backed by local sales tax revenue.
