FAIRBURY, Neb. -- A lot of energy is surrounding the opening of the newest coffee fast food restaurant in Fairbury.

Ziggi's Coffee, a breakfast place that serves drinks and breakfast food, will open on April 9 on the corner of Highways 15 and 136. 

General Manager Courtney Skoog said they have been working hard to set up for the highly anticipated opening. 

“As far as setting it up and getting the store ready to go and making drinks,” Skoog said. “I mean, we’ve been spending a lot of time learning and doing that for the last month.”

The town seems to be excited for the opening. At least, that’s what the social media posts say. 

“It has been getting advertised on Facebook and the posts have been blowing up,” said Emma Ayre, Assistant Manager. “We have a lot of followers and people constantly asking, ‘Hey, when are we opening?’”

What about finding employees? Skoog said they’ve received over 100 applications in a town of only 3,900 people. 

“I think a lot of people are interested in working here just because it is a different environment and we’re going to provide a different culture,” Skoog said. “I mean, it’s similar to fast food but very different.”

This comes after the closing of McDonalds in 2022. With only Runza and Subway as fast food options, the town is looking forward to another take-out option.

“With McDonalds closing, Ryan and I couldn’t stop at McDonalds for a cup of coffee before going to Runza,” Skoog said. “We really needed that caffeine in the morning. So, knowing everybody else is in the same position, we’re just excited to get Fairbury caffeinated.”

The store opens on April 9 with a grand opening celebration set for April 20. The store will be open 5 a.m. to 6 p.m. on weekdays and will open at 6 a.m. on weekends.
