Eunice (Strabel, Stuart, Moerer) Starck was born in Connellsville, PA on June 23, 1941, to John & Grace (Wilson) Strabel, who were missionaries with American Sunday-School Union. Eunice graduated from Scottsdale Joint High School as valedictorian, then graduated from Moody Bible Institute, Columbia Bible College, and UNL with a teaching certificate. She taught Bible in the public schools in Bluefield WV, for 3 years before her marriage to Carleton Stuart. Their daughter, Bethel Ann, was born in Schuyler, NE, while he was a pastor there. They moved to Lincoln, NE, in 1973, where Eunice worked at the NE Department of Revenue, as a banquet waitress at the Hilton Hotel and as a para with Lincoln Public Schools. She started her sales career with Family Food Savings before becoming a financial advisor with Waddell & Reed, retiring after 30 years. She continued helping clients with their Part D enrollments for many years.
Three years after her divorce, she taught financial planning classes in Fairbury and married Marvin Moerer after the death of his wife and youngest daughter in a car accident. Her three stepchildren became her children too as she and Marvin guided them through college and work experiences. After Marvin’s death, she lived alone for six years before marrying her neighbor, Roger Starck, whose wife, Barbara, had died unexpectantly. Roger helped her sort through Marvin’s collections and expanded his own family to include more children and grandchildren. They enjoyed working together on the farm and traveling as much as they could.
Eunice had many volunteer opportunities. She taught English as a Second Language (ESL) at American Lutheran Church with other volunteers. The classes were the highlight of her week! She played piano or organ for worship services, funerals, and weddings at several churches. At her wedding with Roger, she recorded music on a portable piano so Bethel and Carissa could sing a duet. She was in a singing group for many years, entertaining at nursing homes and playing for sing-along programs. She accompanied Sylvia Cross who played violin and Bobbie Likens who played French horn, sometimes printing music for them. Her piano arrangements were favorite hymns dating back to her teen years.
She was an active member of PEO, having served as president of the board of the PEO Home in Beatrice for 5 years. She had been a member of Try-N-Do Extension Club. For 28 years she was active at American Lutheran Church before joining First United Presbyterian Church. At the Lutheran church she taught Sunday school and Vacation Bible School classes and was on several governing boards. She was a deacon at the Presbyterian church and taught grief support classes.
She was preceded in death by her parents; husband Marvin Moerer; sister-in-law Judy Blunt; brother-in-law Bill Dobbs.
Surviving are her husband, Roger Starck, daughter Bethel (Jason) Adams of Walker, MN, step-daughters Rhonda (David) Medley of Lincoln, NE, Carissa (Dan) Lufkin of Fairbury, NE, Terri (Allan) Black of Fairbury, NE; step-son Russell Moerer of Grand Island, NE; granddaughter Elsie Holland, step-grandchildren Kayla, Christian and Charly Lufkin, Amanda Warnke, Kayla & Madison Black, Colton & Kacy Starck; Scott Adams, Tyler Adams; 3 step-great-grandchildren; sister Priscilla (Phillip) Lueck of Arden Hills, MN; nephews, Jon (Kim) Lueck of MN and Kevin (Brenda) Lueck of MD; many other relatives and friends. 
Celebration of Life service will be Friday, July 5th at 11:00 a.m. at the Presbyterian Church in Fairbury. Visitation will be Friday morning from 9:30 – 11:00 at the church. Gerdes-Meyer Funeral Home is assisting with arrangements. Private family burial.
